Last night, the kids and I made a meal for Hubbys birthday (which is on Monday - but who wants to celebrate their birthday on a week day???) Anyway, I'm not a great dessert maker, would rather someone else goes to the effort and I usually buy something from the cheesecake shop but last night we decided to make our own. So I'd like to share our Chocolate Pudding Recipe 200g dark cooking chocolate - we used woolies own brand and worked ok 125g butter, chopped 1/2 cup brown sugar 2 eggs 2 egg yolks 1tsp vanilla extract 2 tbs plain flour ice-cream to serve - we used French Vanilla Cocoa powder to dust - we used hot chocolate powder 1. Preheat oven to 180. Grease 4x 1cup ramkins and place onto a baking tray 2. Break chocolate into pieces and place into a small saucepan with butter and sugar. Melt over low heat until smooth - cool for 5 mins 3. Lightly whisk eggs and egg yolks together and gradually stir into chocolate mixture with vanilla extract. Sift flour over and gently fold in. Divide mixture evenly between ramekins. Bake for 20 mins or until top is set but centre is still soft. Drop a scoop of ice-cream into the centre and dust with cocoa. moirclan Posted May 8, 2011 Report Share Posted May 8, 2011 pumpkin soup i roast my pumpkin the night before i need it i just cut it into sections spray with olive oil and in the oven when im ready i boil potatoes and an onion when ready i put the pumpkin taken out of the skin and the potato and onion through the potato mincer [ or you could mash it , add veg stock , salt and pepper and tbs of curry powder , let cook up together , when its ready add sour cream stir and serve with garlic bread or toasted samdwiches , it also freezes really weel Quote Link to comment Share on other sites More sharing options...

Guest guest1228 Posted May 9, 2011 Report Share Posted May 9, 2011 Chocolate Fudge Brownies (tried and tested and all gone) 250g butter 275g dark choc (I used 50% cocoa solids though recipe said 70% and was fine) 275g caster sugar 3 large eggs 1tsp vanilla extract (real extract costs loads so I used imitation) 225g plain flour half tsp salt -Grease and line a 9'' tin -melt butter and choc over low heat -beat sugar, eggs and vanilla till fluffy -whisk choc mixture into egg mixture till combined -stir in flour and salt -pour into tin and cook on 180c or gas mark 4 until just set -leave to cool for 10 mins before tipping out onto cooling rack -dont cut till cold Quote Link to comment Share on other sites More sharing options...

Guest NeilEB Posted May 10, 2011 Report Share Posted May 10, 2011 Ok slightly more seriously: Chicken Chasseur: 600g chicken breast 100g mushrooms - sliced 1 carrot - sliced 2 medium onions - sliced 2 cloves garlic 2 sprigs parsley 400g tinned chopped tomatoes 2 tablespoons tomato puree 1 chicken stock cube in 300 ml water. 1. Heat the oil in a frying pan. Fry the chicken for a few minutes on each side until browned. Place into oven-proof casserole dish. 2. In the frying pan, sautee the onions and garlic for a few minutes until soft. Place into casserole dish with the chicken. 3. Place the mushrooms, carrots, tomatoes and tomota puree into casserole dish. 4. In the frying pan, heat the chicken stock and water until bubbling, stiring so it absorbs all the juices. Pour into the casserole dish. 5. Stir all ingredients together until mixed. Add in the parsely, then whack into a preheated oven (gas 5) for an hour until the veg and chicken is tender. Dice up all roughly into a Baking pan (shallow) Courgette aubergine , Tomatoes ( fresh ) Red onion Garlic , Snap pea's Mushrooms, Red or Yellow Peppers , Drizzle/ douse with Olive oil and add a quarter of a cup of balsamic Vinegar ..Sea salt and black pepper , maybe a touch of mixed herbs ( italian ) Roast in oven for about 40 mins on about 180 , untill vegies look a bit crispy/stewed ... add to cooked pasta with some chopped tinned tomatoes ( optional ) all warmed add parmesan cheese ... yummmy ... I have an electric frypan, and use that infrequently. But I got one of those newer convection ovens for my birthday last month. It only has 4 recipes in the booklet, so does anyone have a favourite recipe for Xmas Recipes, I can practice on, to cook for my Xmas in July evening on the 23rd July?? SusieQ Posted July 29, 2011 Report Share Posted July 29, 2011 I cooked last night some lemon slices.....easy as: 1 1/2 cups plain flour 1/2 cup of icing sugar 150g melted butter 400 g tin of skimmed sweetened condensed milk 1 egg 1 tablespoon lemon rind 1/2 cup of lemon juice 2 tablespoons of plain flour, extra 1 teaspoon of baking powder preheat oven to 180.c grease and line a lamington tray 18x28cm cobine first 3 ingredients. mix well..press mixture into tray bake for 15 mins put condensed milk, egg in a large bowl and beat well.. Add lemon rind, lemon juice, extra flour and baking powder and beat until combined. Pour over bas and return to over for another 25/30 minutes until the top ahs set. Allow to cool in pan, refrigerate. cut into pieces and sprinkle with icing sugar. And Eat all up before the kids get home from school!!! Ive also got bananas that have gone over ripe so I am going to make Banana Bread, here is my recipe Banana Bread Ingredients: 3 or 4 over ripe bananas (mashed) 1/3 cup melted butter 1 cup sugar 1 egg - beaten 1 teaspoon Baking Powder 1 teaspoon Vanilla Essence Pinch salt 1 ½ Cup of All Purpose Flour Method: 1. Pre heat the oven to 175 degrees 2. Mix the melted butter with mashed banana 3. Mix sugar, egg, vanilla essence, combine the ingredients 4. Guest NeilEB Posted July 29, 2011 Report Share Posted July 29, 2011 Ok - how about a slow cooked veggie chilli: Get some random veggies and chop into large, rough, chucks (i use cougettes, shrooms, butternut squash, carrots, peppers, but whatever you have handy is fine) Do the same with some new potatoes (can use larger potatoes, but then they go mushy if there's no skin to hold them together). Get a can of kidney beans (can also use chick peas for a slight more 'curry' chilli). Passata Spices to taste (curry, chilli, tabasco, pepper, cumin, herbs etc) Jalepno (de-seed and finely chop), or scotch bonnet (leave whole and removed before serving!)
