My bad, it's whisky tonight.

I used to love Irish, Black Bush especially but I've developed a taste for peat so if I had a choice it would be Lagavulin or Ardbeg but sadly, funds as they are, it's going to be a Macallan. It's still very nice but as it's the last bottle of grain on the shelf, it's not my favourite. Still, with my cold as it is, anything better would likely be wasted.

When I lived in Scotland I was lucky to visit plenty of highland distilleries, Cragganmore among them. Tonights Macallan draws it's water from the Spey, the same as Cragganmore so they have some similarities and if you haven't tried it, since we're in Speyside I'd recommend Aberlour 18 year old too if you've not tried it.

 

You see, maybe we can talk about more than coffee. At least you have better taste in grains than you do beans :wink:

The food sounds amazing though and I want the recipe for the zampone.

 

The Asian dish turned out wonderful. The Irish stew I fecked. Made too much veg, so didn't have enough stock and so added too much water and now it doesn't have the taste.

Salvageable though. Get some stock bones from your butchers tomorrow, roast them with s&p and a few onions cut in half until they're all dried and dark but not charred then transfer to a large pot, put onto the hob, deglaze the roasting tin with a glug of red wine then hoof it in with the bones, a dash of worcestershire and cover with water. Let it simmer away for an hour or so then strain and reduce. Add that to your stew and jobs a good'un.

 

The Zampone is nothing more than as I described, just adjust your filling as you like. Debone the trotters (plenty of youtube videos around, don't pierce the skin), then stuff with your mix. I like the prosciutto in there because it keeps its body and adds texture to the finished zampone. Once stuffed you roll it tightly in cheesecloth, folding the ends in to make it snug then tie it with butchers twine like you would truss up a rolled roast.

Because I add so much flavour to the stuffing I usually poach in just water rather than stock. You need to bring it to the boil quite slowly and once it gets there reduce it to a simmer and put the kettle on. Top up with boiling water to keep it covered for the next four or so hours. You can tell its done by squeezing the toe end and if you can feel the bones moving around under the skin the tendons have softened and you're good. When done don't take it out of the liquid, let it cool off completely and even better, when cool put it in the fridge overnight.

When cool you pull off the cloth, wipe off the jelly and then you have two options. Slice and serve cold or warm it slowly in oil and butter in a pan basting for 30-45 minutes. Serve whole on a bed of braised lentils or cut into thick slices and dress however you wish.

IKNOWC but I had another interview today for a midwife led unit and it went reeeeally badly!! I feel a bit upset by it and it has made me worry about an interview in my own trust, even though I have a job it is a drive!! I am excited to start applying for Aussie jobs soon though :jiggy:

Thanks guys I know and I do appreciate the experience but do wonder why some people especially midwives are so cold/hard faced in interviews - no need! I just want to apply for jobs now....hope I get on the grad course in Aus then we will be going in Jan!! I need to get out and see the light [emoji87]

Being with the job they do you wouldn't expect them to be cold you expect them to be all soft and caring. My MIL works in our local maternity unit, and can't believe what some of them are like . So if you do get on the grad course( fingers crossed) will you be going out earlier than planned

have you had a glass of something chilled to take your mind off of it x

We hoped to go in Jan/Feb which is our preference but it looks like financially and because some exciting stuff is happening in Dec/Jan that it would be later in May time I would say but if I get on grad prog then it will def be Jan :) FX

 

Yes i am often surprised at how cold some can be - doesn't sit right with me!

I know how you feel, it took my hubby 7 months from when we landed, but he did get one in the end. Unfortunately our timing for his line of work was awful as there was literally no jobs out there for him. Hopefully something will come up soon.

My daughter came home from her first week at school here with an award for getting along. She had to go up and receive it in her school assembly. I'm so proud of her. She's made so many friends in her first week at school. :cute:

That's lovely Lou, to hear she is doing well already must be a relief for you you must be proud of her x

I'm on my way to meet my son's father for the last time before we leave. It's only the second time we will have spoken about the move since we told him last August. I've no idea what he wants to talk about and for some reason I'm terrified :-\
